Lately, the only thing I can think about eating is watermelon, more specifically, watermelon & feta cheese. My mind and mouth can’t seem to get over the salty, sweet, juicy combination. Even better than it tastes, is the reaction you get at everyone’s first bite. My coworkers beg me to bring it in as if it’s some über-complicated recipe they can’t recreate. My Israeli father-in-law nearly fell out of his chair when I prepared it at a BBQ last week, claiming it’s every taste of his childhood. Me, I just like anything that combines salty and sweet in the same bowl. Try it out while the melon is in season and super tasty; tell me what you think.
Watermelon Salad
Chunk up half a watermelon (or a whole, go crazy) in a bowl, chunk up a good, firm, sheep’s milk feta on top.
Drizzle with extra virgin olive oil, crack some black pepper in there and throw in a handful of shredded mint or basil (I’m partial to basil in the summertime, I put it on everything). Tell your taste buds, “You’re welcome”.
***lazy hints: if you get your basil from the farmer's market like me, it's pretty filthy. rather than washing and rewashing in a colander, just take off the leaves you want, put them into a big bowl of water, slosh about and let the dirt sink to the bottom.
to make a shmancy chiffonade on top, stack your big pretty leaves up high, roll up your into a cigar shape and slice horizontally into ribbons of food love.
