Anyway, I got home around 11 thanks to the MTA (really? why are there R trains running on the B track?) and wanted something quick. Enter, pre-made pizza crusts. Yes, I do not make my own pizza dough, it's true.

Am I lazy? Yes. But, moreso, I don't have a pizza stone, or a pizza peel or the patience to wait for dough to rise at 11pm, so Mama Mary's Gourmet Whole Wheat Crust suits me juuuuust fine. In fact, Mama makes a damn good crust.
I had leftover sauce, olive tapenade, leftover ricotta and a little eggplant in the fridge, which i cut into pieces, length wise, coated in olive oil, salt and pepper and put in the grill pan for about 4 minutes per side. I baked each differently and then topped with the grilled veg. They spend about 8-10 minutes in the oven and come out crispy and thin and delightful.
I also made a salad of the baby vegetables I picked up at the farm market the other day. The beets were roasted when I made my lasagna, so I just threw in some pretty yellow tomatoes, the baby fennel and a couple fronds. I make a dressing of about two parts olive oil to one part balsamic vinegar, about a teaspoon of honey and a generous pinch of salt and cracked pepper, I will measure it one day, but really, it's the best when I throw stuff in a bowl. The vegetables were tiny, tender and super flavorful. I loved the fennel and can't wait to buy it again! I ended up having enough for lunch today and I'm pretty excited about that.
