
Well, obviously I've gotten behind. But really, we went out to dinner Saturday night, so you didn't miss much. Really, we did miss something, as our vegan pizza from Pala left us wondering how they could mess up a basil pesto and potato pizza, especially when the cheese was so melty and delicious. Let's not even get into the service..
So, last night I used leftovers to make dinner. I cut up the polenta i had leftover into rounds grilled up some zucchini and roasted mushrooms in the toaster oven to make quick, yummy Veggie Polenta "Stacks"... in quotes because the different sizes don't really lend to a neat and tidy tower, but more an overflowing circular jumble. Oh well.
First, I cleaned my mushrooms with a damp towel and put some of my leftover vinaigrette on them with salt and pepper. I put them in the toaster oven at 350 (that little sucker heats up like crazy) for 20 minutes.
I like when mushrooms collapse and get juicy and, well, kind of just destroyed. While those roasted, I cut up my zucchini and put it on my oiled grilled pan, sprinkling with salt and pepper. I let them sit about 3 minutes on each side to get grill marks and a little charring. I can't stand mushy squash, so I like to keep the slices thicker and grilled them a little less than usual. Plus, they cook even after they're out of the pan. Next on the grill went the polenta rounds, these take a little longer, so while these grilled I made a quick "alfredo" sauce on the burner next door to the grill pan. I used this recipe, and added a bit more nutritional yeast for a cheesier taste.
I flipped my polenta (the grill marks, I admit, were a bit disappointing.) for another five minutes on the other side. When that was done, I just stack everything up, adding sauce in between each layer. The textures were all perfect together, the polenta was crispy on the outside, the mushroom was meaty and dense, the zucchini still tasted fresh and had a snap to it and the sauce, obviously was creamy and rich tasting. Today we're both off, and though, I've committed to doing fun things like BBQ's and pool parties, I'm wondering if I should start thinking like a grown up and maybe do the pile of laundry we've been collecting for almost two months and finish addressing our wedding invitations. Boo.
