Oops. Sorry, dudes. I ate this before I remembered to take a picture. You get the idea, though.
Wild Flounder was on sale and I've never really made it before so I decided to give it a shot. I got it home and realized it was tons of fish and I didn't really have the patience to make it the only way I've ever had it in restaurants; stuffed and lemony. So, I snazzied (my mother's word) it up a bit and threw it in the oven.
I always have fresh breadcrumbs on hand. They're easy to make and store. If you have leftover bread from dinner, just cut it into pieces, toast it in the oven or pan, throw it in the food processor with some seasoning and stash it in the freezer to keep it fresh. It's cheaper than the kind in the can and this way you can keep it low on sodium and devoid of sneaky butters and milkfats. I ran my fingers along the fish to feel for those weird little bones and then coated it with a mixture of even parts dijon mustard and spicy brown with a couple spoonfuls of olive oil and about a teaspoon of smoked paprika. Next, I dredged the fish in the breadcrumbs, put it on a sheetpan into the oven at about 400. I took it out around 15-20 minutes (these were giant fishies) and let it rest.
While the flounder was doing it's thing, I chopped up two medium sized potatoes and a head of cauliflower and put them into my tabletop steamer. Oh, you don't know about the tabletop steamer? Seriously, get one. It saves you huge amounts of mess and time and you can honestly put EVERYTHING in there. You'll never boil a potato again. 18 minutes later, I dumped everything into the food processor with some vegetable stock, soy milk, earth balance, salt and pepper and made a delicious mush.
ps: I know I'm awful with measurements. Just add a little liquid, pulse, add a little, pulse, add a little. You'll get the hang of it, I promise.
