I love baked ziti. I really, really love it. I made this for our wedding shower, to ensure vegan guests (mostly myself) had something to eat. It's super easy once you get the cashew ricotta down. You read about that earlier, right? Good. Here's your path to creamy righteousness:
-Boil a pound of lined rigatoni (I know it's not ziti, per se, but the lined pasta makes for better sauce coverage!)
-Warm through some good quality marinara (Usually I prefer my own, but to make it quick, I used Rao's)
-Pull your pasta after about five minutes. THIS is important, no one likes a mushy baked pasta, ech!
-Mix your pasta, sauce and cashew cheese in a baking dish, cover with nutritional yeast sprinkles and breadcrumbs
-Bake for 30 minutes or so, until the top looks crusty/yummy.
No one really knew this was vegan. Not until my friend who wanted it all to himself decided to tell everyone with hopes of swaying them from eating it. Needless to say, no one listened, and it was gone in seriously minutes.
