peeeeeeas.



Peamash with baked eggplant slices.

I had such a righteous pea craving, this was amazing. Why the sad face? I ate way too much.

So easy: 1 bag of frozen thawed peas, handful of mint, a dabbie of earth balance, a splash of soy milk, a dollop of tofutti cream cheese, a couple spinnies in the food processor: mushy deliciousness.
