leftovers

Genius. I'm really getting the hang of this whole menu planning thing. When I go to the grocery store (we've been "borrowing" the car from the in-laws mostly for weekly shopping trips to save $$$) I plan out my meals and usually have one or two correspond with the other. This week I knew I'd have leftover lentils from last night, so I decided to make them into burgers.

I definitely wouldn't go through all the trouble to make these lentils JUST for burgers, but if you're going to have one, you might as well take advantage of the best leftovers ever.

Bacon-Lentil Burgers

1 1/2 cup leftover stewed lentils
1/4 cup breadcrumbs (i used panko)
1 whole egg

Pulse half in the food processor with the egg and add to the remaining ingredients. This made us 3 patties, but if you like minis you could probably get 4-5.
From here you have two options: Fry in a bit of vegetable oil for about 3 minutes per side or bake in a 400 degree oven for about 15-20 minutes, flipping half way.

I served these on whole wheat buns with a little vegan mayo mixed with cumin and lime.
