burger wednesday!


oh, man, this is too easy. i'm so getting into these burgers. although, i'm running out of proteins, any ideas?

i was salmon crazy for a while. do you ever have your food phases? where you can't get enough of one simple food, no matter the preparation you find your mind wandering to it in the middle of your work day and salivating? i've had many; there was my toast and butter phase, portobello mushrooms, ritz crackers, rice pudding... salmon had its moment in there somewhere. the problem with these phases is (with the exception of the ritz) once the phase is over, the dish becomes totally inedible. you can't stand even the smell of it. never has there been such a case as in the salmon. i try to order it in restaurants on cedar planks, i make it at home for my husband and he ends up eating both of our portions. i'm just totally uninterested. until it became a burger!

martha stewart had a delicious looking recipe for these in an everyday food issue and then i saw the idea again somewhere on serious eats. i love the lemony freshness with the dill, it's a hearty sandwich that doesn't make you hate you hate yourse
lf afterward.

Lemony Salmon Burgers with Dilly Mayo


12oz fresh wild salmon
1 lemon, juiced and zested
2 shallots, chopped
3 tbs fresh dill, finely chopped
1/4 c panko or plain bread crumbs
1 clove garlic, chopped
1/4 c vegenaise
4 whole wheat buns
thinly sliced cucumber (optional)
salt and pepper to taste

1. Pulse 1/4 of the salmon in food processor with the shallots, garlic, 2tbs of dill and half the lmon juice until paste forms.
2. Chop remaining salmon into 1/4" cubes, toss with paste, panko and season liberally with salt and pepper.
3. Create 4 patties and chill for 15-20 minutes.
4. Combine vegenaise with remaining dill and lemon juice, season with fresh ground pepper to taste.
5. Toast buns while heating grill pan to medium high; cook burgers 4-5 minutes per side, rest and serve on buns spread with dill mayo and sliced cucumber.

I would eat this on my patio if I had one. Definitely.
