like a rollin' stoooone.


oh, hey delicious seasonal stone fruits.

lately, I've been eating my weight in white peaches, black plums, apricots, pluots and every other delicious concoction with a pit in the middle. my favorite fruit season. I have to admit something... this strange habit I've taken from my mother. I don't like ripe fruits! at least not to eat in my hand. I buy them hard and slightly bitter and then I stash them in the fridge and keep them that way. now you know, and call me a blasphemer, but I crave texture!

once in a while, when I intend to bake or cook with these precious tree gems, I leave a couple out on the counter to do their thing. When I came home today, I knew they were ready but it's far too disgusting outside, and thus in my apartment, to turn on the oven. Solution: salsa!



Yellow Peach Salsa


4 medium sized yellow peaches
3 roma tomatoes, seeded and diced
1 jalapeno, finely minced
1/4 red onion, chopped
2 cloves garlic, finely minced
Juice of 2 limes
Handful of fresh cilantro, chopped
1 tablespoon agave
Salt and pepper


The only thing to do is combine all the ingredients in a bowl and let it sit for a good 20-30 minutes. Spoon it onto some chips, use it as a topping for salad or do like me and let it star in some yummy grilled fish tacos. I've also done this with cantaloupe and cherries. Salty and sweet pretty much rule my life.

I served this with an easy cole slaw I make with slaw mix, vinegar, agave, chives a touch of vegenaise and smoked paprika. It's too hot to spend any more than 20 minutes in my tiny hole of a kitchen!
