blown over.

The big day came... and went. I cooked a marathon of things to bring over to my in-laws, but I did it all in a four-hour rush of flour-covered-burnt-finger-grated-thumb morning. Basically, what I'm trying to tell you all is that I did not take picture and I did not write down any of the recipes I created.

Here's what I made:
-butternut squash and caramelized onion phyllo trianges (squashikopita?)
-pear and blue cheese pecan crostata
-my classic day-old bread/apple/onion/sage stuffing
-maple-bacon roasted brussel sprouts
-roasted squash medley with fresh vanilla
-crunchy topped fennel and onion gratin
-chocolate pecan pie
-pumpkin meringue pie with gingersnap cookie crust (i'm still baking!)

I'm proud to say I did it all without a touch of cow's dairy and only went through one tub of earth balance. Everything was delicious and some of it I have made before, but I have to pat myself on the back for doing so many new things without testing them, getting so much done in so little time and also for getting my hair blown dry and my face put on in time to make the drive to LI.

Here's a shot (albeit a crappy cell phone one) of my pumpkin pie, which I'm happy to say was gone in a matter of minutes in the face of many creamy, chocolatey, professionally baked treats. I made a cookie crumb crust out of gingersnaps and earth balance, baked it for fifteen minutes then let it cool. I used a traditional pumpkin pie filling recipe, only subbed half the pumpkin for sweet potato, baked that off for about 45 minutes. Then, on top made a brown sugar meringue(my first!), slathered it on top and baked that for another 15. It was deeeelicious. And pretty!
