What do you do with leftover pears and arborio rice? You make the sweet version of the dish you had the night before, of course. My body might end up hating me for eating this much creamy rice, but my mouth is so so happy.
Rice Pudding with Roasted Pears
1 cup Arborio Rice
4 cups almond milk (or coconut, soy, whatever)
1/3 cup agave
1/4 teaspoon salt
1 teaspoon vanilla extract
pinches of cinnamon, cardamom, nutmeg
4 medium pears, sliced lengthwise and cored
handful of sugar
honey (optional)
toasted pistachios (optional)

2. Preheat toaster oven (or the real deal) to 350 and lay out pear slices flesh side up with sprinkling of sugar. Roast for about 15 minutes until soft and caramel-y on top.
3. When rice is tender and liquid is creamy and reduced, add in extract and spices.
4. Serve with roasted pears, toasted nuts and a drizzling of honey if desired.
This should be enough for four people… or two if your husband really likes rice pudding.
