Sunday Morning Excess


Mmmm, Sunday.  So many songs about it, so many annoying cliches to reference.  Mostly, Sundays in our house are for relaxation, cuddling, dog walks and catching up on internet "cable" TV.  Also, it's usually a day I can take my time and actually make a delicious, messy breakfast for the two of us. 


If given the choice, 95% of the time I will pick savory breakfast (or any meal, really) over sweet.  This dish is a little of both.  While my body can't seem to deal with traditional cow's milk dairy, I can usually tolerate a little bit of goat's or sheep's.  If this isn't the case, or you're just abstaining from all, coconut fat (that part of the can that is usually on the top after you open it) is a great substitute for a faux-whipped topping.  While it doesn't lend the savory note the goat's cheese does, it certainly places itself snuggly into that velvety-fatty craving that usually accompanies sweet dishes.



Dairy-Free French Toast w/Gingery Pears &Whipped Goat Cheese Creme

for toast:
5 eggs, beaten
1 cup almond milk (if unsweetened add a bit of honey to batter)
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground nutmeg
pinch of salt
6-7 thick slices challah bread

for pears:
4 medium ripe pears
2 tbsp butter substitute
2 tbsp brown sugar
1 tsp ground or 1/2 tsp fresh grated ginger (i'm not big on fresh ginger in sweet recipes but if thats your thing, go for it!)
pinch of salt

for creme:
4 oz fresh chevre
splash of almond milk
1/2 tsp honey/agave


1. Mix first 6 ingredients in large shallow baking dish (or split into two) and soak slices of bread, about 10 minutes on each side.
2. Fry on clean, nonstick griddle for about 3-4 minutes per side, until golden brown.  Place in oven to keep warm, at about 200 degrees.
3. Add all ingredients to pears in saucepan and cook until pears become soft and liquid is sticky and reduced.
4. Whisk ingredients for creme together, adding a tiny bit of milk at a time to just thin the cheese into a sauce-like consistency. 



You know the rest, stack it. drizzle sauce, fall back asleep cause it's motha-effin SUNDAY.
