The ever evolving scramble

The scramble.  Everyone has their own version.  Mine?  It never stays quite the same.  The constants?  Turmeric, cumin, onions, garlic.  The variables?  Eggs, tofu, greens, mushrooms, potatoes, peppers, bacon?  Basically it goes like this:

Make the base; saute a half chopped onion and 2 cloves minced garlic in about 2 tablespoons of olive oil in a large cast iron skillet for about 5-6 minutes.  Add in your choice of veggies, blanched if they're particularly thick (potatoes, broccoli, carrots) and raw if they're more flimsy (greens, shrooms, peppers) salt and pepper them up.  Saute additional 5-6 minutes and dump in your protein, toss around in the oil and veg.  Add in your spices2 teaspoons cumin, 1 teaspoon turmeric, maybe just a tablespoon of your favorite curry powder?  I like to press it down really well to the pan and let it get a crust then scrape it all up.  

I made this special happy Saturday morning breakfast because I knew it'd be the last truly healthful thing I'd be eating for a whole week while I vacation in LA with my best friend.  Off I go!
