holy double.

well, I did not update yesterday. In fact, I didn't do anything yesterday other than work. Yep, I sat at a desk from 9am til 9:51pm, sounds awesome, right? Anyway, I got home around 11 and slunk into my bed and have been sleeping until now. Honestly, I could go more. Needless to say, I did not make dinner.
The night before though? That I have for you. I made polenta and smokey kale.
A couple months back, we decided to treat ourselves to a fancy meal and I took the opportunity to visit Back Forty, a restaurant I've been hearing about since it opened and have been dying to try. I had a portuguese dish with white beans, house made chorizo and what was quite honestly, the most delicious kale I've ever tasted. I couldn't get over every bite, it was salty and had this mouth watering smokey taste to it. I asked the waitress at the end of the meal if I could have just a hint of the secret and she told me the chef grills the leaves over a woodchip grill. Brilliant. But, obviously, not really doable at home.
I let my crushed garlic cloves warm in the oil in my grill pan for about 5 minutes with some crushed red pepper, then removed them to put in my kale (trimmed, with the stems removed). While that sizzled I added my polenta, slowly, to my bubbling mushroom stock and whisked, whisked, whisked. I flipped my kale over and added in about a teaspoon and a half of smoked paprika. I took the sausage I bought on Sunday out of it's casing (does casing gross anyone else out) and browned it up to crumble on top, but ended up just eating mine vegetarian. Did I mention this took seriously around 15 minutes? Hardly any prep, barely any effort and big yummy flavors.
I'm hungry!
