We got a griddler for our wedding. Oh, boy get ready for some pancake posts, people.
These are spelt pancakes, based around this fantastic recipe. Why have I been cooking pancakes this long without knowing you didn't need fat in the pan? With a non-stick surface, I just waited until the pancake turned a pale yellow all over and flipped to find perfection on the other side. So yummy, really, there's nothing better than pancakes, pajamas and TV reruns on your day off. I put pecans in these, a little applesauce and some pumpkin pie spice, only because it's fall and I want it to smell that way in my apartment.
I grilled some peaches and veggie sausage to serve with them, but I really just pigged out on the pancakes. Did I mention I made these about a month ago? I need to get with this whole blogging thing. I have a good collection of yummy things to post, but between exercising, cooking, lasering (my skin, of course) and working to prepare for the big day, I've had zero me-time. Our shower was a success, I made a baked ziti with cashew ricotta and fresh breadcrumbs on top as well as some roasted garlic hummus, sundried tomato tapenade and pumpkin cupcakes (from have cake will travel) which all were eaten before I could get my hands in there! We now have many fun kitchen and entertaining additions. Now, all we need are guests!
Oh wow! Really, you ARE super human. Between working and getting ready for a wedding, you have every reason to neglect blogging! But yet, you still post recipes that make me salivate! Seriously. it's almost Pavlovian---I think "Lazy girl's guide to homemaking"---I salivate.
