The produce is so delicious right now. My favorites? Sweet corn and tomatoes. We took a trip out to the farmstands this weekend and ate our weight in fresh roasted corn. Nothing is better.
Tiny Apartment Grilled Corn
Fresh, sweet corn
Earth Balance margarine
Smoked Paprika
Salt
1. Place 1/4 cup of water in the bottom of your biggest pot with a lid. Cover, bring to boil.
2. Throw in your corn, cover. Let steam for about 4-5 minutes.
3. While corn steams, heat your greased grill pan on the burner next door.
4. Grill ears for 3-4 minutes more, just getting some char on each side.
5. Remove from heat, lay on slabs of margarine, sprinkle with paprika and salt.
6. Get buttery.
I know your mouth is watering. Mine is.
