
hey, brussie babies. they're here again. some of my favorite buddies in the fall. do you think they're yucky? i'm willing to bet it's because you're not cooking them the way they like.
that's right. they don't like it when you boil them, or steam them or overcook them. you know what they like? they like high heat, searing, roasting and they love pork fat. serious, they told me.
Sprouty Fall Pizza
1/2 cup vegan bechamel (w/ a handful of mozzarella daiya and raw minced garlic clove added in)
tbsp earth balance
1 medium onion
organic canadian bacon/pancetta/vegan bacon
handful brussel sprouts(removed outer leaves, any excess core and cut in half)
whole wheat pizza dough
1/2 cup more shredded mozzarella daiya
1. While your bechamel thickens, caramelize your onion. Do this by slicing it in half, then slicing each half thinly and adding into a hot, heavy bottomed pan with the tbsp of melted earth balance. Turn heat to low, cover and simmer for about 20 minutes while oven preheats to a blazing 475.

2. Cut bacon into thin strips and cook over low heat until at least a tbsp of fat is rendered and meat is crispy. Remove meat and and add in brussel sprouts cut side down in single layer.
3. Sear on high heat for about 4 minutes on one side then toss around to finish cooking. Total cooking time should be about 6-7 minutes, for smallish sprouts. Remove from heat, salt if needed (if using veggie bacon, they will likely need some).
4. Shape crust into desired shape (basically, all i can do is a big lopsided rectangle) and move onto pizza stone. Spread bechamel over pizza dough, dot with caramelized onions, bacon, and brussel sprouts, finish with some extra vegan cheese and some fresh grated black pepper.
5. Bake for 9-10 minutes, remove, cool slightly.... stuff. your. face.
let me say, that i made two of these pizzas. and in two days, we ate them. both. completely. i ate them for breakfast, lunch and dinner. and also snacks. typing this now is making me upset that i don't have any. why isn't it acceptable to eat pizza every day?
